Eat Some More Biscuit

Ingredients:
1 block of soft butter
1 cup of icing sugar
1/2 cup of oil
1 tsp vanilla essence
3 tbsp of cornflour
3 cups of plain flour (Add more if needed)

Method:
1.Beat the butter, icing sugar, vanilla essence and oil till white and fluffy.
2. Fold in cornflour, add the plain flour and combine to make a firm dough.
3. Shape into a log and using your palm or ruler slice the dough into 1cm thick slices.
4. Place the pieces on a greased baking tray and bake in a preheated oven at gas mark 4 for 10-15 mins or until light brown. Then decorate as you wish or leave them plain.

Nutella Stack

Ingredients:
Biscuits
Butter
Nutella
Peanut Butter
Condensed Milk
Chocolate chips/pieces

Method:
1. Crush the biscuits and combine with melted butter. Pat into bottom of a brownie tray or oven proof dish.
2. Dollop Nutella over the biscuit base and spread to firm a layer.
3. Melt some peanut butter in the microwave and spread this over the Nutella.
4. Pour Condensed milk over the peanut butter and sprinkle the chocolate. Then cook the stack in a preheated oven at 180 degrees till the condensed milk turns brown.

Note: If you aren’t a fan of peanut butter, replace it with hazelnuts or any crunchy crushed nuts.

Basic Jam Cakes

Ingredients:
4 eggs
8oz butter
8oz self raising flour
8oz sugar
1 tsp baking powder
Vanilla essence
Ice cream essence

Method:
1. Cream together sugar and butter till well combined.
2. Then gradually add eggs and mix. Then the sifted flour, essences and baking powder.
3. Pour mixture into a cake tray and bake in a preheated oven at 180 for  20 to 40 minutes depending on the cake tin.
3. Once cool decorate with seedless jam and desiccated coconut.

Note: try weighing your eggs if they’re large or too small to get a well balanced mixture.

Flapjacks

Ingredients:
16oz oats
6oz caster sugar
1 packet butter
8 heapful tbsp golden syrup
Slab of chocolate
Chocolate chips, raisins, sultanas, cherries (optional)

Method:
1. Melt butter and golden syrup together in a pan.

2. In a seperate bowl mix together oats and sugar.

3. Then pour the melted butter syrup into the oats. Mix it together so well combined.
4. Spoon and pat down flat into a greased baking tin. Place in a preheated oven for 35-40 minutes at gas mark 4.
5. Once out the oven let the flapjacks cool for 30 minutes or so. Then spread melted chocolate on top.

Note: If using an electric oven less time will be needed to bake.

Really Easy Yummy Cakes!

Ingredients:
500g margerine
500g sugar
500g plain flour
8 eggs
2 tsp baking powder
Pinch of cardamon powder
2 tbsp cocoa

Method:
1. Mix butter and sugar until light and creamy.
2. Add beaten eggs, little by little, continuously mixing it.
3. Add remaining dry ingredients an until mix until the mixture is light and fluffy.
4. Bake in a preheated oven at 160 degrees for 20 mins. Don’t open the door before then!
5. Check the cake is cooking using ‘clean knife’ method and once cooked leave to cool. Decorate as you wish.

Note: If you wish to make a large cake, leave in oven for 40 minuted and then check.

Profiteroles

Ingredients:
(makes 25)
4oz plain flour
8oz cold water
pinch of salt
3.5oz butter
3 beaten eggs
3/4 pint double cream
3tns icing sugar
4oz dark chocolate
1oz butter
2tbsp water

Method:
1. In a saucepan heat the butter and cold water in a pan till the butter melts. Then boil for a further 30 seconds and take the pan off the hob.
2. Meanwhile on some greaseproof paper sift the flour and salt. Then add to the water and butter.
3. Whisk a little continuously and then put the pan onto the heat and keep whisking till the mixture becomes a dough and comes away from the side of the pan. Then take it straight off the heat and leave to cool.
4. Add eggs to the mixture and whisk using an electric whisk.
5. Line a baking tray with greasproof paper. Divide the mixture in 24 teaspoons spaced out on the tray. Cook on gas mark 7 for 25 minutes till brown.
6. When cool slit them halfway like burger buns but not the whole way. Then fill with whipped cream (whisked with the icing sugar).
7. Gently warm choclate and add the 1oz of butter and spread on top. Refridgerate for a few hours to set.

Ingredients:
9oz butter
2oz icing sugar
2oz cornflour
9oz plain flour
1/2 tspn vanilla essence

Method:
1. Cream butter and sugar really well till light and fluffy.
2. Mix in the plain flour.
3. Pipe out into the lengths required
4. Cook in oven at gas mark 5 or 160 degrees for 8 to 10 mins.
5. When cool decorate ends with melted chocolate.
