Restaurant Ribs/Chops

Ingredients:
Half kg lamb ribs/chops
2 tbsp mayo
1 tbs each soya sauce, vinegar and lemon juice
2 tsp/1 heaped tbsp Aminas steak and chops masala
1 tsp lemon pepper
3 tsp coriander and cumin powder
1 heaped tbsp ginger garlic crushed
1 heaped tbsp of chopped fresh coriander and stems
1 tbsp yogurt
Green chillies to taste
Salt to taste

Method:
1. Combine all the ingredients and slather all over the meat. Then marinade over night.

2. Wrap the ribs or chops in foil and place on a baking tray. Add a another layer of foil over the tray. Then let it cook in a preheated oven at gas mark 6 for 2-3 hours till well cooked.

3. Once cooked, let it rest for 15 minutes and serve with roasted potatoes, yorkshire puddings and salad.

Mango Mousse Dessert

Ingredients for mousse:
1 tin mango pulp (kesar)
1 carton double cream (whipped)
2 tbsp gelatine
1/4 cup cold Water
Madeira cake

Method for mousse:
1. In a glass bowl sprinkle gelatine add 1/4 cup of water and leave for about 1 minute until it thickens.
2. Then heat in the microwave for 30 seconds. After 30 seconds check if the gelatine has dissolved if not give it another 10 second burst in the microwave. 
3. Combine mango pulp and sugar together. Whisk the cream till thick.
4. Then whisk the gelatine and mango pulp together. Then add thewhipped cream.
5. Finally layer your dessert dish with cake and then a spread of the mango mousse. Leave to set and then add the mango glaze. You can do two layers if you want.

Ingredients for mango glaze:
2 cups mango pulp
1 cup of hot water
2 tbsp of gelatine
Sugar to taste

Method for mango glaze:
1. Dissolve the gelatine in hot water.
2. Add it to mango puree and mix well. Then add sugar if you like it sweeter. Layer onto set mousse and refrigerate for a few hours.

Butter Chicken

Butter chicken
1 whole chicken/breast
2 med onions
1 cup milk
1/4 to 1/2 tin chopped tomato
1 1/2 tsp crushed ginger and garlic
1 tsp salt
Tumeric powder
Marcha bhooki
Coriander powder
Butter chicken packet masala (Shaan)
3 tbsp cream (or more)
1 tbsp tandoori powder
2 tbsp vineger
2 tbsp ketchup
Fenugreek leaves (methi)
6-7 crushed cashews or almonds
Clarified butter
Coal piece

Method:
1. Dice the onions and add to hot oil. Braise till the onions soften fully.
2. Then add the milk and chicken and let it cook till the water burns off. Then remove the chicken.
3. Blend the chopped tomatoe tin and add to the pot with all the spices (minus the tandoori masala and only a little of the butter chicken packet masala) and crushed nuts. Let it cook till oil bubbles appear at the top.
4. After this add the cream, tandoori masala and the cooked chicken and let it all simmer for a few minutes.
4. Before its cooked fully add the ketchup, vinegar and a little bit more of the butter chicken masala.
5. Once cooked remove from the heat and sprinkle the methi over it.
6. Light the coal, wrap in foil and make a slit at the top. Place this in the butter chicken pot. Then pour melted ghee over it and close the lid of the pot straightaway.
7. After a few minutes remove the coal and throw away. Garnish with freshly chopped coriander.

Serve with chapattis.

Flapjacks

Ingredients:
16oz oats
6oz caster sugar
1 packet butter
8 heapful tbsp golden syrup
Slab of chocolate
Chocolate chips, raisins, sultanas, cherries (optional)

Method:
1. Melt butter and golden syrup together in a pan.

2. In a seperate bowl mix together oats and sugar.

3. Then pour the melted butter syrup into the oats. Mix it together so well combined.
4. Spoon and pat down flat into a greased baking tin. Place in a preheated oven for 35-40 minutes at gas mark 4.
5. Once out the oven let the flapjacks cool for 30 minutes or so. Then spread melted chocolate on top.

Note: If using an electric oven less time will be needed to bake.

Chicken 65

Ingredients for chicken:
500g chicken breast (cubed)
2 tbsp corn flour
1 tbsp soya sauce
1 tsp salt
1 tsp chilli powder
1/2 tsp curry powder
Crushed ginger & garlic
1 egg
1 tsp baking powder

Method for chicken:
1. Marinate the chicken in the above ingredients, minus the baking powder, overnight. Add more salt and chillies if needed.

2. Mix the baking powder into the chicken and shallow fry. Set aside.

Ingredients for paste:
2 tbsp of oil
3 tbsp of tomato purée
1 tbsp yogurt,
1/2 tsp salt
1 tsp chilli powder

Method for paste:
1. Mix all the ingredients together and heat it in a pan.
2. Let it cook till the paste is warm.

3. Then add the fried chicken. Mix all together till fully incorporated.
