Sausages in a Blanket

Ingredients:
2lb mince
Handful of coriander
Salt
Pepper
2 tsp garlic and ginger paste
4 tsp tandoori powder
2-3 tsp cumin powder
Green chillies to taste
1-2 onions (diced and water squeezed)

Method:
1. Put the mince in a blender for a few minutes. Then add the spices and further blend.
2. Take out the meat and make into sausage shapes.
3. Then place on a baking tray with a less than a few tbsp of boiling water.
4. Cook in a preheates oven for 15-20 mins. Leave to cool.
5. When cool wrap in puff pastry and now they are freezer suitable or bake fresh.

Yoghurty Kebabs

Ingredients (Kebab Tomatoe Gravy) :
5-10 sheesh kebabs (cooked & sliced)
Naan/pitta bread
Fresh red peppers diced
Chopped coriander
Parsley
1 onion sliced
1/2 chopped tomato tin (blended)
3/4 tsp coriander powder
3/4 tsp cumin powder
Salt to taste
Chilli powder to taste
Crushed ginger and garlic
Fresh green chillies to taste
Turmeric
Ground pepper

Method (Kebab Tomatoe Gravy):
1. Soften the onions on oil th en add all the spices, green chillies, garlic and ginger as well as the tomatoe tin.
2. Spread pieces of the bread onto the bottom of a dish and sprinkle over half the red peppers and herbs (parsley and coriander).
3. Spread half the warm tomatoe gravy over it and then arrange the kebabs on top. Then pour the other half of the gravy on top.

Ingredients (Yogurt Sauce):
1/4-1/2 cup of Greek yoghurt
Blended Garlic
Parsley
Salt

Method (Yogurt Sauce):
1. Combine all the ingredients together to form a smooth paste.
2. Add the other half of the parsley, coriander and peppers to the kebabs. Then pour this on top of the kebabs and gravy.

Ingredients (Butter Sauce):
1 tbsp melted butter
Chilli powder

1. Mix the butter sauce ingredients together and pour onto the kebabs, gravy and yogurt. Garnish with fresh chillies.image

Battered Lamb Chops

Ingredients:
500g chops
Crushed garlic and ginger
Crushed green chillies
Coriander powder
Cumin powder
Salt
Pepper
Red chilli powder
Oil
Flour seasoned w/ salt & pepper
Eggs seasoned w/ salt and green chillies

Method:
1. Marinate meat in the above ingredients overnight minus the eggs and flour.
2. Dip in seasoned flour then seasoned eggs and fry for 3-5 mins on each side.

Lamb Kebabs

Ingredients:
1lb mince meat
1/2 lb diced onions
2 tsp cumim powder
2 tsp coriander power
1/2 tsp turmeric powder
Salt to taste
Red chilli powder to taste
Crushed green chillies to taste
1 tsp crushed ginger and garlic
1/2 bunch chopped coriander
2 handfuls gram flour
1 egg

Method:
1. Mix all the ingredients together minus the egg and flour and leave to marinate in the fridge overnight.
2. When ready to cook add the egg and gram flour and mix all together. Shape the mixture into burger sized shaped or into long kebabs shapes.
3. Fry in hot oil until golden brown. Drain onto some kitchen roll and then wrap in foil to be baked in the oven for a little while.

Lamb Spaghetti

Ingredients:
1lb lamb
1 large Onion
Red chilli powder to
Crushed green chillies to taste
1 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
Whole spices; cinnamon, cloves, cardamon pods.
2 fresh tomatoes
1/2 chopped tomatoes tin
Fresh coriander
Ginger and garlic paste
Salt to taste

Method:
1. Cook the usual meat curry using the above ingredients. Be aware not to add only a little water to the meat when cooking as the onions and tomatoe tin will produce the sauce (masala) which is soaked up by the spaghetti later. It shouldn’t be watery.
2. Whilst waiting for the meat to cook, break the spaghetti into four pieces and boil in a separate pot.
3. Once meat is cooked and masala created toss the spaghetti into the meat and mix till well combined.
4. Garnish with coriander and some fried onions and potatoes and…

… Serve with the following condiments:
Cucumber – chopped into small cubes
Tomatoes chopped into small cubes
Red onion – diced
Fried onions
Fried potatoes – grated then deep fried
Eggs – boiled then grated/cubed

Note: you can also add a dash of tomato sauce before serving.

Desi Style Meatloaf

Ingredients:
2 lbs mince
3 eggs beaten
1/4 cup Olive oil
1/2 cup tomatoe sauce
2 slices bread crumbled
1/2 cup baked bread crumbs
Green chillies to taste
Ginger and garlic paste
3/4 cup chicken fry masala
1/4 cup cornstarch
Chopped coriander

Method:
1. In a large bowl, combine all the ingredients except meat. Once well combined add the meat. Ensure that it is all mixed well.
2. Press the mixture firmly into a 9×5 loaf pan. Then bake at 375F for 1 hour uncovered.
3. Serve with beans or green beans, mash or baked potatoes, gravy or sour cream.

Canadian Ribs

Ingredients:
1 stack of ribs
1/4 cup oil
2 tbsp tandoori masala
3 tbsp steak seasoning
1/4 cup BBQ sauce

Method:
1. Combine all the ingredients above and mix well. Marinate for atleast 6 hours or more.

2. Cook in preheated oven at 400F for 15 minutes, turn over and cook for another 10 or 15 minutes until tender.

Restaurant Ribs/Chops

Ingredients:
Half kg lamb ribs/chops
2 tbsp mayo
1 tbs each soya sauce, vinegar and lemon juice
2 tsp/1 heaped tbsp Aminas steak and chops masala
1 tsp lemon pepper
3 tsp coriander and cumin powder
1 heaped tbsp ginger garlic crushed
1 heaped tbsp of chopped fresh coriander and stems
1 tbsp yogurt
Green chillies to taste
Salt to taste

Method:
1. Combine all the ingredients and slather all over the meat. Then marinade over night.

2. Wrap the ribs or chops in foil and place on a baking tray. Add a another layer of foil over the tray. Then let it cook in a preheated oven at gas mark 6 for 2-3 hours till well cooked.

3. Once cooked, let it rest for 15 minutes and serve with roasted potatoes, yorkshire puddings and salad.

Steak Pie

Ingredients:
500g beef cubed finely
Salt
Pepper
Grounded chillies
Tumeric powder
Onions
Butter
Shortcrust pastry
Potatoes diced
Sweetcorn
East End Honey & Chilli Sauce

Method:
1. Marinate the beef overnight in salt, pepper, green chilies and tumeric.
2. Finely dice onions and braise in the butter until the onions soften. Add the cubed beef pieces and let it cook until the beef becomes tender.
3. Add sweetcorn and diced potatoes and cook until the potatoes are cooked. 4. Lastly add the Honey & Chilli sauce and leave the mixture to cool down.
5. Place a sheet of short crust pastry at the bottom of an oven proof dish, pour the meat mixture on top and layer a sheet of pastry on top.
6. Cook in a preheated oven till the pastry is cooked.
