Spaghetti Fry

Ingredients:
500g spaghetti
2-3 tbsp spoon oil
Green chillies
1-2 tsp chillies
Black pepper
3 garlic cloves
Green, yellow and red pepper
200g mushrooms
Chopped coriander

Method:
1. Fry all the spices in oil.
2. Add the vegetables till cooked.
3. Add boiled spaghetti. Mix together and serve with chopped coriander.

Note: you can add any other vegetables you would like.

Chicken Spaghetti

Ingredients:
Chicken breast
Onions (for frying and blending)
Green chillies
Crushed ginger and garlic
Fresh tomatoes or tinned tomatoes
Peppers
Carrots
Sweetcorn
Coconut cream

Method:
1. Brown onions then add the spices including green chilies, ginger and garlic.
2. Add the chopped fresh tomatoes or tinned or both till oil bubbles appear ath the top.
3. Add the diced chicken breast and leave to cook.
4. Meanwhile blend the peppers, sweetcorn, onions and carrots together. Then add to the chicken. Leave to cook for a few minutes.
5. Finally add the coconut cream. Once melted, combine and switch off the gas.
6. Add the boiled and drained spaghetti to the sauce. Garnish with chopped coriander, red onions and fried samosa pastry ( or crushed pringles)

Lamb Spaghetti

Ingredients:
1lb lamb
1 large Onion
Red chilli powder to
Crushed green chillies to taste
1 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
Whole spices; cinnamon, cloves, cardamon pods.
2 fresh tomatoes
1/2 chopped tomatoes tin
Fresh coriander
Ginger and garlic paste
Salt to taste

Method:
1. Cook the usual meat curry using the above ingredients. Be aware not to add only a little water to the meat when cooking as the onions and tomatoe tin will produce the sauce (masala) which is soaked up by the spaghetti later. It shouldn’t be watery.
2. Whilst waiting for the meat to cook, break the spaghetti into four pieces and boil in a separate pot.
3. Once meat is cooked and masala created toss the spaghetti into the meat and mix till well combined.
4. Garnish with coriander and some fried onions and potatoes and…

… Serve with the following condiments:
Cucumber – chopped into small cubes
Tomatoes chopped into small cubes
Red onion – diced
Fried onions
Fried potatoes – grated then deep fried
Eggs – boiled then grated/cubed

Note: you can also add a dash of tomato sauce before serving.

Creamy Tagliatelle

Ingredients:
300g tagliatelle
1 tsp salt (more to taste)
1/2 lb diced chicken breast
1/2 tub philadelphia
1 tub cream
Handful of broccoli
Handful of sliced peppers
1 tsp spoon pepper
2 tbsp oil
Crushed green chillies to taste
Garlic and ginger paste

Method:
1. Heat the oil and fry the chicken with the ginger and garlic. Add salt, green chillies and pepper.
2. Blanche the broccoli and pepper and add to the chicken.

3. Then add the philadelphia and cream.

4. Lastly add the boiled tagliatelle.

Note: You can swap the broccoli for mushrooms.

Butter Chicken Lasagna

Ingredients:
(makes one medium sized dish)
2 tbsp olive oil
1/2 onion (sliced)
2 tsp crushed garlic
1 pepper (cut finely)
1/2 courgette (cut finely)
1 carrot (cut finely)
Chicken breast (cubed)
1/2 tsp black pepper
1 tsp tandoori masala
1/2 tsp red chilli powder
1 jar ready pasta sauce
Salt to taste
50g single or double cream
1 jar white sauce/homemade
Lasagna sheets
Mozerella & cheddar cheese

Method:
1. Heat the oil in a pot and add the onions till they soften and turn brown at the edges.
2. Then add the garlic and let it fry for a few seconds.
3. Par boil the carrots separately and then add with the rest of the vegetables to the onions. Cook until soft.
4. Now add the chicken, black pepper, tandoori masala, salt and chilli powder and mix together. Ler the chicken cook till it starts to release water.
5. Then add the jar of pasta sauce and a little more oil if needed. Let the mixture cook on medium heat till oil bubbles appear at the top.
6. Taste and adjust salt and chilli powder accordingly. Lower the heat and then add the cream; mixing till fully incorporated. Cook for a few minutes on medium heat and then switch off the heat completely.
7. Grease an oven proof casserole dish and put a layer of lasagna at the bottom. Then some white sauce, mixed grated cheese and butter chicken filling.
8. Repeat twice more in the order of lasagna white sauce, sprinkled grated cheese and chicken filling. Bake in the oven for 35-45 minutes at gas mark 5 till lasagna is cooked and brown at the top.

Serve with a crunchy ceaser salad.

Sweet & Sour Noodles

Ingredients:
250g noodles (pre-boiled)
500g prawns or chicken breast
1/2 tsp Ground pepper
1 tsp salt
1 bunch of spring onions
1 bottle of tomato chilli sauce (e.g East End Hot & Spicy)
1 tbsp crushed ginger & garlic
2 tbsp soya sauce
2 tbsp honey
2 tbsp lemon juice
2-3 handfuls of Sweetcorn
2-3 handfuls of fresh peppers
Red chilli powder to taste
Fresh green chillies (optional)
Fresh coriander

Method:
1. Heat 2-3 tbsp oil in a wok. Add the spring onions and pepper. Cook till the vegetables heat up.
2. Add the prawns of chicken and cook for a short while.
3. Add the soya sauce, honey, lemon juice, salt, ginger, garlic fresh peppers and sweetcorn. Cook for a little while.
4. Then add the chilli tomato sauce.
5. Once the prawns are cooked add the boiled noodles and fresh coriander. Mix thoroughly.

Vegetable Lasagna

Ingredients:
1 red pepper
1 green pepper
1 large stem of leek
1 med courgette
1 large carrot
1 medium or large red onion
1 bottle lasagna sauce some Some tinned tomatoes
Spices

Method:
1. Brown some fresh garlic in oil.
2. Then add green chilies, coriander and cumin powder, turmeric, red chilli powder, salt, black pepper and some mixed herbs. Cook for a few minutes.
3. Now add carrots and cook for 3/4 mins. Then add the courgette and let it cook for 8/10 mins. Then add the leeks and Sweetcorn and cook for few more minutes.
4. After this then add the pasta sauce, tomatoes, peppers and onions. Bring to a boil and simmer till oil evaporates.
5. Make a white sauce and layer the lasagna in a dish with the vegetable mixture.

Note: Chop the vegetables chunky to give it more texture.

Coconut Spaghetti

Ingredients:
1 tbsp ground peanut
1 tbsp white poppy seeds (Khus khus)
1 tsp cumin powder
1 tspn chilli powder
2 fresh tomatoes
1 chicken cut into pieces
2 &  1/4 tbsp crushed ginger
1 &  1/4 tbsp crushed garlic
1 &  1/8 tbsp green chillies
3 glasses water
3/4lb Spaghetti
1 tin coconut milk
1/4 piece of coconut cream block
1tbsp chickpea flour
2 tsp crushed red chillies

Method:
1. Make a paste with the first 5 ingredients on the list till tomatoes using a mini blender.
2. Warm a little oil and add the chicken. Allow to cook till most of the water is burnt away but leave a little so not totally dry.
3. Add salt to taste, ginger, garlic, green chillies and the blended paste. Allow to cook.
4. Then add 3 glasses water and cook on med heat.
5. Once half the water is burnt away mix in a paste created from the tin of coconut milk, coconut cream, flour and water. Allow to cook.
6.  In a seperate pan add 1 sliced clove of garlic cut when golden do not use. But add the red crushed chillies and mix thoroughly. Then add this to chicken mix.
7 . boil the spaghetti in water. Drain and add to the chicken mix. Combine it all together. Garnish with coriander. Serve with red onions and fried and flaked filo pastry (samosa par).

Macaroni & Cheese

Ingredients:
Macaroni
4 tbsp butter
2 eggs
180 ml evaporated milk
1 tbsp hot sauce
1 tsp salt
Fresh grinded black pepper
1 tsp mustard
280g cheddar cheese grated

Method:
1. Boil 1 and 1/2 cup macaroni. Drain and return to pot.
2. Melt butter on top by tossing it to give it a coat.
3. Whisk eggs, evaporated milk, hot sauce, salt, pepper, and mustard. Stir into pasta and add cheese.
4. Stir over low heat for a few minutes until creamy.

Note: When reheating leftovers add a little whole milk to restore the creamyness
