Lamb Kebabs

Ingredients:
1lb mince meat
1/2 lb diced onions
2 tsp cumim powder
2 tsp coriander power
1/2 tsp turmeric powder
Salt to taste
Red chilli powder to taste
Crushed green chillies to taste
1 tsp crushed ginger and garlic
1/2 bunch chopped coriander
2 handfuls gram flour
1 egg

Method:
1. Mix all the ingredients together minus the egg and flour and leave to marinate in the fridge overnight.
2. When ready to cook add the egg and gram flour and mix all together. Shape the mixture into burger sized shaped or into long kebabs shapes.
3. Fry in hot oil until golden brown. Drain onto some kitchen roll and then wrap in foil to be baked in the oven for a little while.

Sweetcorn Fritters

Ingredients:
1 small tin Sweetcorn
1 egg
1 cup self raising flour
Spring onions
Fresh coriander
Green chillies to taste
Salt to taste
Pinch of turmeric
1/4 teaspoon crushed ginger/garlic

Method:
1. Mix all the above ingredients together.
2. Then add a little bit of water to make a smooth paste.
3. Drop a tablespoon of mixture in a pan with shallow oil and fry till golden brown on both sides.

Homemade Chicken Burger

Ingredients:
(makes 40 medium to small size burger)
2 1/2 lb chicken mince
2 1/2 tsp garlic ginger
2 1/2 tsp green chillies
1 tsp salt
2 tsp black pepper
3/4 mug breadcrumbs (fresh bread blended till crumbs)
4 onions finely diced and juice squeezed out
3/4 bunch of fresh coriander

Method:
1. Blend together all the above ingredients.
2. Shape the mixture to form shapes.
3. Shallow fry in a little oil.

Serve with homemade chips.

Bread Bhajia/Pakoras

Ingredients:
Six slices of bread
Water
3tbsp channa/chickpea flour
2-3tbsp rice flour
1tbsp yogurt
1tbsp sesame seeds
1tsp citric acid
Green chillies to taste
Coriander and cumin powder
Crushed ginger and garlic
Fenugreen leaves (methi)
Handful fresh coriander chopped
Pinch of baking powder

Method:
1. Soak bread in water for 5 minutes. Then drain and squeeze all the water out.
3. Add all the rest of the ingredients to the bread and mix thoroughly.
4. Make balls and deep fry.

Tandoori Burgers

Ingredients:
25g butter
1lb chicken mince
1 egg
1tsp salt
3/4tsp black pepper
1tsp chilli powder
1tbsp tandoori powder
1tbsp green chillies
1tbsp crushed ginger and garlic
1 onion
1tbsp soya sauce
1/2cup breadcrumbs

Method:
1. Put all ingredients in a food processor. Shape the mixture into flat burgers and fry in shallow oil.

Tawa Chicken

Ingredients:
1kg Chicken
4 tbsp butter or ghee
1 cup onion minced
1 tbsp ginger paste
1 tbsp garlic paste
2 tbsp lime juice
1tsp red chilli powder
1/2 tsp black pepper
3 tbsp tandoori spice mix
1 tsp garam masala
Salt to taste
Green chillies (for garnishing)
Chopped coriander

Method:
1. Clean and cut chicken into pieces. Place all ingredients minus butter, chillies and coriander saved for garnishing into a bowl. Mix well and leave to marinate in the fridge for at least 2 hours.
2. Heat butter in a large flat pan (tawee). Add marinated chicken and stir fry for a few minutes.
3. Then reduce the heat to low and cook for 15-20 minutes and keep stirring till chicken is tender.
4. Sprinkle garam masala over it and garnish with chillies and chopped coriander.

Pumpkin/Squash Fry

Ingredients:
500g butternut squash or pumpkin cubed
1/4tsp black pepper
1/4tsp salt
1/2tsp chilli powder
1/2tsp mustard seeds
1tsp crushed garlic
1tbsp ghee/clarified butter

Method:
1. Heat the butter in a flat pan or pot.
2. Add the rest of the ingredients and cook for 6 to 8 minutes till the vegetable is cooked through.
