Grilled Prawns

Ingredients:
2 tbsp lemon juice
1 tbsp garlic
4 tbsp mayonnaise
2 tbsp plain yoghurt
2 tbsp peri peri oil
2 tbsp peri peri sauce
1 tsp aromat
1/2-1 tso peri peri powder
2 tbsp chilli powder
125g butter
1kg prawns

Method:
1. Marinate prawns with all the ingredients overnight
2. Fry prawns in a pan with butter on high heat or grill for a few minutes till cooked.

Sweet & Sour Chickpeas

Ingredients:
1 Chickpea tin
1 Tomatoe tin
Mustard seeds
Curry leaves
Red chilli powder
Tumeric
Cubed potatoes
Sugar/ghor
Red onions
Crushed ginger and garlic
Tamarind/Amli sauce
Lemon juice

Method:
1. In a pot add some mustard seeds and curry leaves. Temper on low heat.
2. Add oil and 1/2 tin of chopped tomatoes (blended), salt, red chilli powder, tumeric and crushed garlic and ginger. You may wish to add some quarters of potatoes. Leave to simmer.
3.Rinse and drain a can of chick peas and add to the pot.
4. Put in some amli sauce,  lemon juice and some ghor/sugar.
5. Once cooked through serve with chopped red onions and fresh coriander. You can also add hev/sev.

Chicken Tortillas

Ingredients:
Butter
1lb chicken (cut into small cubes)
1tsp chicken spice
1/4tsp salt
1/2tsp red chilli powder
1tsp mustard sauce
1tsp mixed herbs
3/4tsp mild curry powder
1/4tsp pepper,
1tsp crushed ginger
1tsp crushed garlic
Crushed green chillies to taste
Lemon juice
2tbsp mayonnaise
4tblsp ketchup
Onions
Carrots
Peppers
Sweetcorn

Method:
1. Mix together all the spices and sauces with chicken.
2. Add cubed butter and the marinated chicken and cook till water dries out.
3. Cut the vegetables and sauté till soft.
4. Add the vegetables to the chicken filling mixture.
4. Place the filling on a tortilla wrap, add grated cheese on top of filling. Then fold the tortilla in half and make sure the filling is spread evenly in the tortilla. Repeat with rest is for tortillas and filling.
5. Sprinkle a bit of grated cheese on top of each tortilla and some mixed herbs.
6. Bake tortillas in oven till nice and crisp or microwave for 40 seconds and then grill on low heat till crispy.

Tandoori Burgers

Ingredients:
25g butter
1lb chicken mince
1 egg
1tsp salt
3/4tsp black pepper
1tsp chilli powder
1tbsp tandoori powder
1tbsp green chillies
1tbsp crushed ginger and garlic
1 onion
1tbsp soya sauce
1/2cup breadcrumbs

Method:
1. Put all ingredients in a food processor. Shape the mixture into flat burgers and fry in shallow oil.

Tawa Chicken

Ingredients:
1kg Chicken
4 tbsp butter or ghee
1 cup onion minced
1 tbsp ginger paste
1 tbsp garlic paste
2 tbsp lime juice
1tsp red chilli powder
1/2 tsp black pepper
3 tbsp tandoori spice mix
1 tsp garam masala
Salt to taste
Green chillies (for garnishing)
Chopped coriander

Method:
1. Clean and cut chicken into pieces. Place all ingredients minus butter, chillies and coriander saved for garnishing into a bowl. Mix well and leave to marinate in the fridge for at least 2 hours.
2. Heat butter in a large flat pan (tawee). Add marinated chicken and stir fry for a few minutes.
3. Then reduce the heat to low and cook for 15-20 minutes and keep stirring till chicken is tender.
4. Sprinkle garam masala over it and garnish with chillies and chopped coriander.

Creamy Pasta

Ingredients:
250g pasta boiled
1 med onion finely chopped
1 punnet mushrooms
¾ cup mix veg
2tbs Butter
1tbs ground garlic
1tbs green masala
1tbs Aromat (optional)
¼ tsp white pepper,
1 packet Knorr cheese pasta sauce
1 packet Knorr pasta mushroom sauce
1 cup fresh cream
½ cup water
½ cup grated cheese

Method :
1. Boil pasta and keep aside.
2. Braise onions in butter with garlic and all spices. Mix well.
3. Add mushrooms and vegetables and cook.
4. Mix sauces in water to form paste. Add to veg and add fresh cream. Let it simmer.
5. Toss in pasta and mix well. 6. Place mixture in casserole dish, sprinkle cheese over and warm in oven till cheese melts over.

Muffins Dessert

Ingredients:
1 medium sized galaxy bar
1 tin of custard
1 tub mascarpone (250g)
1 pack of 4 chocolate muffins

Ingredients:
1. Slice muffins and place on the bottom of a dish.
2. Heat custard and mascarpone on the hob and add galaxy chocolate. Stir well till chocolate and custard mixture are fully combined.
3. Add the chocolate mixture on top of layered muffins. Let it cool.
4. Once cooled, cover with whipped cream and decorate with flake or use dream topping and then flake. Serve chilled.

Note: You can add sugar to custard mix for an even sweeter dessert!

Oreo Dessert

Ingredients:
20 oreos crushed
1 tin nestle condensed caramel
1 large double cream
3tspn cocoa powder

Method:
1. Beat double cream until stiff. Add the caramel and cocoa and beat again till mixed thoroughly.
2. In a pyrex dish add crushed oreos and the a layer of the caramel mix, repeat 2 to 3 times.
3. Sprinkle flake over the last layer.

Snickers Milkshake

Ingredients
15 fun sized snickers bars chopped
2 cups vanilla ice cream
1/3 cup milk
1/4 cup chocolate sauce
2 tablespoons caramel sauce (optional)
1 cup sweetened whipped cream

Method:
1. Place 14 chopped snicker bars in a blender along with the ice cream, milk, chocolate sauce, and caramel sauce (if using).
2. Blend mixture for about 30 seconds to 1 minute or until desired consistency has been achieved.
3. Divide milkshake into glasses and top with whipped cream.
4. Finish with a sprinkle of chopped snickers and a drizzle of caramel sauce (if using). Serve chilled.

Aero Mint Pudding

Ingredients:
1 big tin nestle cream
1|2 tin condensed milk
1 packet choc chip cookies
1 big bar aero chocolate
1|2 mug hot chocolate
Aero chocolate to decorate

Fresh cream
Peppermint essence & green colour.

Method:
1. Whisk nestle cream. Add the condensed milk and leave aside.
2. Dip biscuits in hot chocolate & lay in a dish. Pour the nestle cream mix on top and leave to set. Grate a bar of Aero on top.
3. Beat fresh cream with peppermint essence & green food color. Pour on top of the chocolate. Decorate with grated leftover aero chocolate.

Note: To create a more Chocolatey taste add in 1tsp of cocoa in the nestle cream & condensed milk mixture
