Chicken Shawarma and Pita Bread

Chicken Ingredients;
500 g bones less chicken breast (cubed)
1 tsp chilly powder
1 tsp cumin powder
1/2 tsp turmeric
1 tbsp garlic and ginger
1 tbsp tandoori masalo
1 tbsp lemon juice
2 tbso oil
2 tbsp yoghurt
1 tsp salt

Chicken Method:
1.Marinate chicken in the above Ingredients and leave for a minimum of four hours or overnight.
2. Grill for 15 mins (or over cook for 10 mins at 200 degrees) turning chicken a few times until just cooked.  Be careful not to over cook.
3. Once cooked chop into smaller bitesize chunks.

Pita Bread Ingredients:
(makes 6)
270g plain flour
4 1/2 tlb oil
1 tsp salt
3/4 tsp dried yeast
3tbsp milk
Warm water

Pitta Bread Method:
1. Mix the flour, yeast, salt and oil.
2. Add warm milk and enough water to make a dough.
3. Knead with oiled hands the place in a bowl and cover. Leave it to rise for 30 mins.
4. With light hands roll out 6 equally sized pittas and cover and leave for 10 mins.
5. Cook on a hot flat romantic pan (tawa).
6. Once cooked assemble the chicken into the pitta bread with salad (grated carrots, red onions, lettuce and cucumbers).

Chicken Tortillas

Ingredients:
Butter
1lb chicken (cut into small cubes)
1tsp chicken spice
1/4tsp salt
1/2tsp red chilli powder
1tsp mustard sauce
1tsp mixed herbs
3/4tsp mild curry powder
1/4tsp pepper,
1tsp crushed ginger
1tsp crushed garlic
Crushed green chillies to taste
Lemon juice
2tbsp mayonnaise
4tblsp ketchup
Onions
Carrots
Peppers
Sweetcorn

Method:
1. Mix together all the spices and sauces with chicken.
2. Add cubed butter and the marinated chicken and cook till water dries out.
3. Cut the vegetables and sauté till soft.
4. Add the vegetables to the chicken filling mixture.
4. Place the filling on a tortilla wrap, add grated cheese on top of filling. Then fold the tortilla in half and make sure the filling is spread evenly in the tortilla. Repeat with rest is for tortillas and filling.
5. Sprinkle a bit of grated cheese on top of each tortilla and some mixed herbs.
6. Bake tortillas in oven till nice and crisp or microwave for 40 seconds and then grill on low heat till crispy.

Tandoori Burgers

Ingredients:
25g butter
1lb chicken mince
1 egg
1tsp salt
3/4tsp black pepper
1tsp chilli powder
1tbsp tandoori powder
1tbsp green chillies
1tbsp crushed ginger and garlic
1 onion
1tbsp soya sauce
1/2cup breadcrumbs

Method:
1. Put all ingredients in a food processor. Shape the mixture into flat burgers and fry in shallow oil.

Quick Chicken Balti

Ingredients:
Oil
Chicken breast
Salt
Cayenne pepper
Crushes gaQuickrlic
Basaar
Vinegar
Green peppers
Ketchup
Mayonaise
Spring onions
Shallots

Method:
1. Put oil and boneless chicken in a pan. Add 1 and 1/2 tsp salt, 1/2 tspn black pepper, crushed garlic,1 tsp cayenne pepper, 1 to 2 tsp basaar (Pakistani curry powder).
2. Mix and let it cook in its own juices and vinegar for 5 mins.
3.  When chicken is almost cooked, add green capsicum pepper cut into small pieces and 1 heaped tsp of paprika.
4. Mix thoroughly and then add 1 and 1/2 tsp of cornflour to the side of the pot ans gradually stir in.
5. Add 2 squeezes of tomatoe ketchup, a generous tbsp of mayonnaise and add quartered shallots or/and spring onions if u have.
6. Once onions have sauteed garnish with coriander. Serve with roti, naan or stuff into a pitta bread pockets with mint & cucumber coleslaw and green salad.

Roti Quesadilla

Ingredients:
Chicken breast cubed finely
Whole cumin
Crushed ginger & garlic
Black pepper
Blended green chilli
Chopped peppers, cucumbers and tomatoes
Grated carrots
Day old rotis/chapattis
Grated cheese

Method:
1. Cook the chicken with the whole cumin, ginger, garlic, black pepper and green chillies till the water evaporates.
2. Prepare a salad by chopping all the vegetables and mixing them together.
3. Now cut a roti in half. Put a little bit of cheese, chicken then salad on one half and place the other half on top.
4. Cook the roti on a frying pan or crepe/roti pan on slow heat till it becomes crispy. Turn over and repeat.

Chicken Nimbali

Ingredients:
Oil
Chicken breast cubed
Crushed garlic
Salt
Cumin powder
Double cream
Baby potatoes
Cherry tomatoes
Mozerella cheese

Method:
1. Marinate chicken breast in garlic, green chillies, salt, cumin powder and some double cream.
2. Then fry chicken in a little oil but not for too long so it dries out.
3. Then put the fried chicken in a rectangle pyrex dish, adding some par boiled baby potatoes which have been halved or thickly sliced on top.
4. You can then add sliced cherry tomatoes on top and then sprinkle salt and pour over some cream or white sauce. Cover with mozzarella cheese and bake in the oven.
